Today we took out our first Bresaola and the results were pretty solid. We used meat from Whole Foods for this round and wanted to compare against our usual beef source Natural Homestead Beef based out here in Boulder County. Frank from Natural Homestead Beef raises Highland Cattle on grass, supplemented in the winter with natural grains and hay, and the meat is by far the best natural beef I've had in as far as i can remember. This is the kind of beef that anything but salt and pepper just end up getting in the way and clouding what is so good about this meat. So, long story short, we've used the same recipe, the same everything, and in about 4 weeks we'll be able to do a side by side comparison to see who is the king of beef out of these two.
