Bresaola - Taste Test Results

I took out the second Bresaola today and this was the one that was going head to head with the Whole Foods one made a month and a half or so ago.  This was the Natural Homestead Beef eye round, and I have to say, I am kind of surprised by the results.  The NHB is by far one of the better beef's I've tasted for cooking and grilling, but the flavor was a bit flat, at least near the ends, for the new Bresaola. I was expecting the richness that the beef has when cooked, however it seemed to mellow out.  The pepper is there for sure, but the beef, hrmm...

As for the texture and all that, I weighed it and saw that it was around 50% loss for overall weight so thought it'd be good to take out, however, as you can see in some of the photos, it was a bit soft in the center, but not horrible.  I just prefer it on the dry side so it "shaves" and "peels" nice and easy.  The M-600 took better to this than anything I've applied it to yet, so that was nice.
