Coppa Complete

After about 60 days, the coppa is finally out of the chamber and I have to say, I'm pretty pleased with the results.  Clove, as you might expect with Coppa, is the dominant flavor, but there is nice pepper at the end. The pork is fantastic as usual, and it just tastes so great alone, but it's another example of how good product in, results in good product out.   I didn't "roll" this one, but I don't think it matters, the result tastes just the same.
