Cow Parsnip Bresaola Hung to Dry

This post is a bit late to go up, but about 2 or 3 weeks ago we started to cure a eye round utilizing a few local ingredients besides just the beef.  We decided to use Cow Parsnip as one of the aromatics, as well as some green juniper as well.  This was the first end to end project for Kate, so she is the one featured in the below photos.  She did a killer job on the tying and gets my seal of approval, though she obviously doesn't need it. The smell of the beef was great, definitely intrigued to see how it turns out, as you can smell the stronger juniper smell and the earthiness of the cow parsnip.  It should be out of the chamber in another week, just in time for Hank Shaw's visit.
