Cured Goat Leg - Tasting

Ok, let me just say this straight away.  This was FANTASTIC!  I think this is far and away the best thing I've made to date.  The texture was great, the flavor was complex and nuanced, it really was just a great tasting piece of meat.  I started this a few months back and decided to go in a bit of a different direction with some tarragon and to add some spice.  The result was great.  Beautiful floral notes, a little hint of anise that plays well off the richness of the goat and a lingering spice that comes in at the end. This piece is best served super super thin, shaved if you can.  No oil or otherwise needed to help the flavor along, simply slice and eat.  This is one I'll be adding to the favorites book and continuing to make for years to come.
