Part of the misconception in the States is that good charcuterie only exists across the pond in Europe and this couldn't be further from the truth. While it may be more accessible and cheaper, fine producers of charcuterie exist right here in our backyard. If you just look across the country right now, folks like Boccalone, Red Apron, Creminelli and Revival Meats are setting the bar for what this country can do in traditional forms. What is often forgotten about though is the country ham. People think of the honey glazed ham that has sat on the table during easter and christmas as the example of american hams. The good ole' spiral is far from what country ham is, folks like Broadbent and Benton have been making exceptional aged ham for years. Through tried and true family recipes, these guys are absolutely players in the world of charcuterie and cured meat products.
